Apple Pastries With Hot Apple Sauce

 
 
 
Ingredients:
  • 400g pkt sweet short pastry
  • 2 apples
  • 1/4 cup chopped dried apricots
  • 2 tsp brown sugar
  • 1 egg
  • 1 cup apple juice
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 2 Tbs butter
Direction:
Roll pastry out pastry to 28cm square and cut into 4 squares.  Peel
the apple and cut in half and remove the cores.  Chop the apricots
and mix with the brown sugar.  Divide the apricot mixture between
the 4 apple halves, filling the cavity.  Place one apple half on
each square.  Gather up the pastry to enclose the apple leaving a
small gap at the top, so you can see the apricots.  Lightly beat
the egg and brush over each pastry apple.  Bake at 180 C 40 minutes,
or until the apple is tender.  Serve with Hot Apple Sauce.

Heat the apple juice, brown sugar and cinnamon, stirring until
sugar dissolves.  Bring to the boil and simmer 5 minutes.  Stir in
the butter.
