Almond Tarts

 
 
 
Ingredients:
  • 1 cup butter
  • 1/4 cup cornstarch
  • 1/4 cup icing sugar
  • 2 cups flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup rice flour
  • 1/4 cup cocoa
  • 2 large eggs
  • 2 teaspoons almond extract
  • 1 cup icing sugar
  • 2 tablespoons butter
  • 1/2 teaspoon almond extract
  • 24 maraschino cherries,whole, with stems
  • 1/2 cup raspberry jam
Direction:

Pastry - Butter should be soft, combing together and roll out into
pastry shells. Spoon 1 teaspoon of jam in bottom and top with
filling.

Bake at 350 - 10-15 minutes. Ice when cool. Top with cherry.
