1/2 c sugar 3/4 c mashed Maine potatoes 1 1/2 c warm water 2 pkgs dry yeast 1/3 c margarine (low fat) egg beaters (or 2 eggs) 1 t salt 6-7 c flour 1 c brown sugar 1 t cinnamon 2 T low fat margarine, melted raisins (optional)

Combine sugar and potatoes. Add water and yeast, mix well. Add margarine, eggs, and salt. Gradually stir in flour, knead. Let rise. Divide dough roll into a 12x12" square. Brush with margarine - sprinkle cinnamon and brown sugar mixture. Roll jelly roll style. Cut and place in greased pan. Let raise again covered. Bake at 350 degrees for 20-25 minutes. Drizzle with confectioner sugar icing after baking.
