Cinnamon Potato Rolls

 

  • 1/2 c sugar
  • 3/4 c mashed Maine potatoes
  • 1 1/2 c warm water
  • 2 pkgs dry yeast
  • 1/3 c margarine (low fat)
  • egg beaters (or 2 eggs)
  • 1 t salt
  • 6-7 c flour
  • 1 c brown sugar
  • 1 t cinnamon
  • 2 T low fat margarine, melted
  • raisins (optional)

  • Combine sugar and potatoes. Add water and yeast, mix well. Add margarine, eggs, and salt. Gradually stir in flour, knead. Let rise. Divide dough roll into a 12x12" square. Brush with margarine - sprinkle cinnamon and brown sugar mixture. Roll jelly roll style. Cut and place in greased pan. Let raise again covered. Bake at 350 degrees for 20-25 minutes. Drizzle with confectioner sugar icing after baking.
