Cream of Carrot Soup

 
 
Ingredients:
  • 3 cups shredded or grated carrots
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 4 cups chicken broth
  • 4 cups heavy whipping cream (half and half may be substituted)
  • Salt and white pepper to taste

Direction:

In saucepan, combine first 4 ingredients, simmer until tender. DO NOT OVERCOOK as vegetables should retain texture. Warm cream but do not boil until it thickens. Slowly add broth and vegetables with seasonings. Makes four large servings.
