Hot Apples with Oat Topping

 
 
 


  • 4 Apples, tart
  • 2 T cornstarch
  • 1/4 c maple syrup
  • 2 t lemon juice
  • 1 t cinnamon, ground
  • 1 c rolled oats, quick cooking
  • 1/4 c maple syrup
  • 2 t oil
  • 1 t vanilla

  • To make the apples: Peel and core the apples, then cut into small chunks. Place in a 9" glass pie plate and toss with lemon juice and cinnamon. Stir well. Cover with vented plastic wrap and microwave on high for 6 minutes, or until apples are tender. Let stand for 5 minutes.

    To make the oat topping: Place the oats and cornstarch in another 9" glass pie plate. Drizzle with maple syrup, oil and vanilla. Mix well. Microwave on high for 1 minute. Stir well. Repeat 3 or 4 times, or until the oats are crisp and very lightly browned but not burned. Sprinkle over the apples. Makes 4 servings.
