Drain tofu; pat dry. Place tofu in microwave-safe bowl. Mash tofu with potato masher. Microwave on high for 2-1/2 minutes. Place tofu in a fine mesh colander; drain. Heat oil, crush pepper in a frying pan over medium-high heat. Add next three ingredients; saute for 3 minutes or until crisp tender. Add drained tofu; continue to cook for 5 minutes, stirring frequently. Stir in remaining ingredients. Reduce heat, simmer 5 minutes. Serve with whole wheat tortillas and extra salsa.* Mori-Nu Silken Firm or Extra Firm Tofu may be substituted.
