Mori-Nu Fiesta Scrambler 

 
 
 
  • 2 pkgs Mori-Nu Silken Lite Firm or Extra Firm Tofu*
  • 1-1/2 t olive oil
  • 1/8 t crushed red pepper
  • 3 scallions, sliced
  • 3 large garlic cloves, minced
  • 1/4 t turmeric
  • 1/3 c chopped green bell peppers
  • 1 T tamari
  • 3/4 c chunky medium-hot salsa, drained
  • 1 T lime juice
  • 1/4 c chopped fresh cilantro

    Drain tofu; pat dry. Place tofu in microwave-safe bowl. Mash tofu with potato masher. Microwave on high for 2-1/2 minutes. Place tofu in a fine mesh colander; drain. Heat oil, crush pepper in a frying pan over medium-high heat. Add next three ingredients; saute for 3 minutes or until crisp tender. Add drained tofu; continue to cook for 5 minutes, stirring frequently. Stir in remaining ingredients. Reduce heat, simmer 5 minutes. Serve with whole wheat tortillas and extra salsa.

    * Mori-Nu Silken Firm or Extra Firm Tofu may be substituted.
